There is something particular about Picobar that is hard to name until you are sitting there. The pool nearby, resort guests lounging or moving about unhurriedly, bocce courts in use, music at the right volume. Palm trees in the foreground, the Mayacamas in the distance. An open timber structure, comfortable outdoor sofas, a fire pit for when the evening turns cool. The afternoon has a way of stretching.

You don't need to be staying at the resort to enjoy Picobar. It offers something specific: a few hours at one of Calistoga's best properties, with the ease of a resort around you, without a room booking or a dinner reservation.

The bar runs on tequila and mezcal, an extensive and serious program. In a valley that has made wine its identity, the cocktails here feel like a genuine alternative rather than an afterthought. The En el Ultimo Momento, the Green Flash, the Drink of the Gods. Each one its own thing. It is easy to be talked into another round.

The kitchen belongs to Chef Gustavo Rios, who describes Picobar as a passion project built on two places he knows well: coastal Ensenada, Mexico and Northern California wine country. His team is largely from different regions of Mexico, and the food carries that depth and intention. Housemade chips and salsas. Ahi tostadas. Whipped avocado with goat cheese. The quesabirria arrives crispy and deeply cheesy, umami all the way through, with a rich consommé on the side. The ingredients are local: Rancho Gordo beans, Cowgirl Creamery cheese. The sensibility is Rios's own.

It is the kind of place that earns a regular spot in the rotation. Go on a Saturday and plan to stay longer than you think.
